From the moment he stepped onto Austin Community College District\u2019s (ACC) Highland Campus as a high school student, Daniel Ortiz Frias knew he\u2019d found the place that would shape his future. <\/p>\n\n\n\n

\u201cSeeing all the kitchens, equipment, and students in uniform excited me. I immediately started my application process, even before I graduated from high school.\u201d<\/p>\n\n\n\n

Daniel began his ACC journey in fall 2023, first completing his core classes before diving into culinary and hospitality courses. Those early cooking classes came with pressure. <\/p>\n<\/div><\/div>\n\n\n\n

<\/p>\n\n\n\n

\u201cI felt stress and anxiety every time I walked into one of my cooking classes. The amount of recipes paired with limited time was overwhelming at first, but as time passed, I became accustomed to working under time constraints and pressure.\u201d<\/p>\n\n\n\n

His turning point came the day he stepped into his first restaurant job as a line cook. <\/p>\n\n\n\n

\u201cBefore, I only cooked when I was at ACC, so setting foot in the industry for the first time was a big step. All the classes had prepared me for that moment in my life.\u201d<\/p>\n\n\n\n

Along the way, Daniel found mentors who helped shape his skills and confidence. He thanks Chef Ryan Swank, \u201cfor always pushing me to have a better sense of urgency,\u201d and Chef Craig Sowell, \u201cfor being an amazing and hilarious teacher during lectures.\u201d <\/p>\n\n\n\n

When he needed help navigating degree requirements, financial aid, or unlocking courses, Daniel says ACC was always ready. \u201cACC offices were always one call or email away from responding to my questions.\u201d<\/p>\n\n\n\n

One of his proudest accomplishments? Taking a leap and joining the study abroad program in Italy. \u201cThough hesitant at first, I took the opportunity to study the region of another country, as well as their cooking culture and dishes.\u201d<\/p>\n\n\n\n

Now graduating with his associate degree in Culinary Arts, Daniel plans to continue building his career in the food and beverage industry. He currently works as a line cook and hopes to move into a sous chef role within the next few years.<\/p>\n\n\n\n

His advice for future students is simple and bold: \u201cTake risks in your life. They may look intimidating at first glance, but down the road, they’ll pay off greatly.\u201d<\/p>\n\n\n\n
